My new try is to double whatever freezer friendly meal I make for dinner then single portion the second batch for TV dinner style meals! Then my family can grab whatever sounds good to them.
This week I did Butter Chicken and Minestrone Soup! Froze the soup in 1 cup cubes. Great with a grilled cheese! Butter Chicken is single serving portion with 1/2 cup jasmine rice. I added a tbsp of water to rice for reheating.
Both recipes were just googled from the internet. Any recipe would do, but I used the butter chicken recipe from the web site Well Plated and minestrone was from Cookie and Kate. For the minestrone I cook the pasta separately from the soup so it doesn’t get soggy.
